Boiled Egg, Cottage Cheese & Avocado Bowl
- 2 eggs (hard boiled)
- 1/3 cup cottage cheese (low fat)
- 1/2 medium avocado (sliced into cubes)
- 1 tbsp red onion (diced)
- 1/4 medium red capsicum or cucumber (sliced)
- 1 tsp white vinegar
Boil eggs on stovetop for 10 minutes. Allow to cool and cut into quarters.
Add eggs, cottage cheese, avocado, onion and capsicum into a bowl.
Drizzle with vinegar and salt and pepper to taste.
