Boiled Egg, Cottage Cheese & Avocado Bowl

  • 2 eggs (hard boiled)
  • 1/3 cup cottage cheese (low fat)
  • 1/2 medium avocado (sliced into cubes)
  • 1 tbsp red onion (diced)
  • 1/4 medium red capsicum or cucumber (sliced)
  • 1 tsp white vinegar
  1. Boil eggs on stovetop for 10 minutes. Allow to cool and cut into quarters.

  2. Add eggs, cottage cheese, avocado, onion and capsicum into a bowl.

  3. Drizzle with vinegar and salt and pepper to taste.
