Mexican Inspired Chicken Salad

  • 80 g chicken breast (grilled or roasted, diced)
  • 1/2 cup black beans (drained and rinsed)
  • 1/4 cup corn kernels
  • 1 cup lettuce (shredded)
  • 1/4 cup cherry tomatoes (halved)
  • 1 tbsp Greek yoghurt (light)
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  1. Combine Greek yoghurt, oil, paprika and cumin in a small bowl and set aside.

  2. Add all remaining ingredients into a salad bowl and toss to combine. Add dressing and use tongs to distribute evenly.

  3. Serve or refrigerate in airtight container.
