Spinach, Egg, Tomato & Cottage Cheese Sandwich
- 2 slices Wonder White High Fibre Bread
- 1 handful baby spinach
- 1 egg (boiled & sliced)
- 1 small tomato (sliced)
- 1/4 cup low fat cottage cheese
Spread cottage cheese onto one slice of bread and top with sliced egg, tomato and baby spinach. Add salt and pepper to taste.
Assemble sandwich with remaining slice of bread and cut in half to serve.
